Thank you for this suggestion! I looked up histamine intolerance (affects about 1% of people, as far as we know so far) and asked my doctor, who said my symptoms can also be due to anxiety but there's no harm in trying an elimiantion diet as I probably get more than enough nutrition.
Just cutting out my fermented vegetables has helped reduce the bothersome symptoms. I'll miss the flavor, but my spouse (who doesn't like the smell) will appreciate the absence and I've already gotten used to the main contrast flavor being apples.
