I also have a smart TV that I have never connected to the internet, and I never foresee a reason to either. When I want to use apps on my TV, I use a separate streaming box. If in the future there is a software update for the TV with a cool feature I want (unlikely), I would connect it via ethernet temporarily, perform the update, and then disconnect ethernet.
I would never connect it over WiFi for fear that it wouldn't forget the network. If someone has a smart TV that only supports WiFi, then I would suggest they setup a new WiFi network, temporarily connect the TV to perform the software update, and then disable the WiFi network.
Exactly. It is Core OS, not CoreOS and it doesn't mean what they think it means. But's that's as much you're going to hear from someone that's actually from inside Apple.

My understanding of what Apple is likely trying to do with a SIM-less phone is allow you to choose your carrier and change it at any time directly from your phone, without needing to seek out a little piece of plastic and a paperclip.
When I went to Europe this summer with my 3G iPad, it was difficult in some cities to find a place to even buy a SIM card (let alone a paperclip to use to eject the SIM tray). Since my iPad is unlocked, it seemed to be a bit ridiculous that I even had to go through this. My device should just do a network scan, see what networks are available, and let me compare the plans (price/data) and choose one directly from my device.
I would never connect it over WiFi for fear that it wouldn't forget the network. If someone has a smart TV that only supports WiFi, then I would suggest they setup a new WiFi network, temporarily connect the TV to perform the software update, and then disable the WiFi network.
